Can this be done with the GeoExpress trial version?

If so, how?

Yes, the trial version will convert TIFF to MrSID and vice-versa. The trial version will add "X" watermarks to the imagery.

If it is just one image that you would like to convert, add it to the images tab and press encode. If you have downloaded the trial, it comes with a trial guide which should help address basic questions.
